sci-ml/diffusers: add 0.41.0

Upstream dropped httpx from its requirements: it now uses the httpx
that huggingface_hub re-exports from huggingface_hub.utils, which
releases before 1.31 do not provide. The direct httpx dep and its
deprecation note go, and the huggingface_hub floor follows upstream's
new 1.32.0.
