dev-ruby/redis{,-client}: use real gemspec with patches
The stub gemspec generated by ruby-fakegem declares no runtime deps,
so Bundler never activates redis-client when resolving the lockfile and
require 'redis-client' fails at runtime.
Restore RUBY_FAKEGEM_GEMSPEC for both packages and patch the gemspecs
to remove require_relative/Dir.chdir blocks that break evaluation
outside the gem root.
