Rename no-clowntown eclasses

Our python-{single-,}any-no-clowntown eclasses were introduced to
replace python-{single-,}r1. However, the 'any' bit turned out to be
confusing given the apparent presence of python-any-{single-,} eclasses
used by some ebuilds.
Rename our eclasses by removing the 'any' part of the name, so that in
the future we can actually introduce wrappers for the upstream *any*
variants.

Replace usage of git-2 eclass with git-r3

The git-2 eclass has been removed as part of the distribution-wide
transition to Python 3. With that, a lot of our ebuilds no longer work.
This change adjusts them to use the new git-r3 eclass.
