dev-python/posthog: add 7.39.1

Version bump from ::guru's 7.29.0. Upstream dropped six and
python-dateutil from the core deps (dateutil is now test-only).
The mcp test deps (dev-python/{mcp,fastmcp}) are not in ::gentoo,
so posthog/test/mcp/ is ignored instead.
